Generally, fresh soft cheeses will be higher in carbs, while aged hard cheeses are lower. Some of the cheeses that contain close to zero grams of carbs include blue cheese, parmesan cheese, mozzarella, gouda, feta, cheddar cheese, cream cheese, buffalo mozzarella, goats cheese, camembert, Monterey jack, Colby jack, Swiss, provolone, Brie, and halloumi.

Regarding vegetables and fruit, these foods can’t be zero carbs, but Kait lists the lowest-carb ones. For vegetables, we have bok choy, arugula, asparagus, iceberg lettuce, romaine lettuce, butter lettuce, pickles, Swiss chard, celery, cucumber, and cabbage. As for fruits, avocados, olives, and coconut are the lowest carb.

Finally, Kait talks about fats and oils, which only contain trace amounts of protein and carbs. The best ones you can use for cooking include beef fat, bison fat, ghee, coconut oil, palm oil, duck fat, chicken fat, and bacon grease. Olive oil and avocado oil are also good, but they only contain trace amounts of carbs.
